Light and crisp meringue nests topped with softly whipped cream, fresh strawberries and juicy pomegranate for an easy dessert that feels fresh and festive.
Ingredients
1 pack Cowell’s Genuine Large Meringue Nests (6 pack)
300ml cream
1 tablespoon icing sugar
1 cup strawberries, sliced
1/2 cup pomegranate arils
3 tablespoons berry coulis or strawberry sauce
Icing sugar, for dusting
Method
Place the meringue nests onto a serving platter or individual plates.
Pour the cream into a chilled bowl and whisk until soft peaks form. Add the icing sugar and continue whisking until smooth and fluffy.
Spoon the whipped cream into the centre of each meringue nest.
Top with sliced strawberries and pomegranate arils.
Drizzle over the berry coulis just before serving.
Finish with a light dusting of icing sugar and serve immediately.
